I hate to even think about it, but it feels like Summer is slipping away like a bouquet of colorful balloons in the breeze, and I’m trying to hold on tight before the last few beautiful days are just a distant memory!

So, we’re seizing the days, and that includes enjoying all the foods of the season. I shared our 4-generation cobbler on Monday, and today, it’s a cool, creamy chicken salad sandwich that’s perfect for a Summer lunch.

Just 4 ingredients:

2 cups cold, cooked, shredded chicken

(leftover crock pot chicken from this recipe works perfectly)

1/2 of a ripe avocado, chopped

1/4 cup Greek yogurt

1 to 2 Tbsp lime juice

Gently blend it all together, then serve on a bed of lettuce or on your favorite bread. Adjust the ingredients if you’d like it a little more creamy or a little less tart.

Like these last few days of Summer, this cool, creamy goodness won’t last long. So serve some up for your friends and family, savor every moment, and enjoy!
