Apple Arugula Autumn Salad
This recipe came to me out of a craving for something green and autumn and even though it’s a wide variety of flavors, they somehow come together and work out just right! Plus, it’s quick and easy, so it checks those boxes for a great salad for weeknights or special dinners as well.
Here’s all you’ll need:
- 5 oz package baby arugula
- 2 small avocados, chopped
- 4 slices prosciutto, crisped
- 1 Honeycrisp apple, thinly sliced
- 1/2 crumbled feta
- 1/4 cup pumpkin seeds
- pomegranate dressing to top
Simply layer all ingredients, drizzle with your favorite pomegranate dressing, and serve!
