Easy Lemon Raspberry Sweet Rolls
Ready for some summer flavors that will bring a smile to your tastebuds? These lemon raspberry sweet rolls are a fun twist on my favorite easy cinnamon rolls I shared HERE and I think you’ll agree that these are just as easy and just as delicious! I made these over the weekend when my sister and her crew came for my birthday and my mouth is still watering thinking about them now!

Here’s all you’ll need:
(Keep in mind I doubled the recipe for this post- this version will make 8, double it for 16.)
1 lb refrigerated pizza dough
half stick of butter, softened
1/2 cup granulated sugar
1-2 Tablespoon lemon zest
1 cup fresh raspberries
for the icing:
1/2 cup powdered sugar
2-3 tsp milk
While letting the dough rest on the counter according to directions, prepare the lemon sugar by grating the lemon and mixing the zest with the sugar in a food processor. I love THIS HAND GRATER and THIS FOOD PROCESSOR for recipes like this.
When the dough is ready, roll it out into approximately a 12″ x 15″ size.
Next, spread on the butter and sprinkle with the lemon sugar.
Next, top with raspberries, reserving a few for the top after baking.
Roll it up from the wider side, then cut into 8 to 10 rolls, depending on your desired thickness.
Place the cut rolls into a greased pan. Use a 9×13 pan for a double recipe, or 8×8 square for a single.

Let the rolls rise on the counter for an hour or in the fridge overnight. When ready to bake, place in 375º oven and bake for 15-25 minutes or until golden. (Baking time will vary depending on the size you cut the rolls and whether you are making a single or double recipe.)
While the rolls are baking, mix up this simple sugar glaze by adding the milk to the powdered sugar a little at a time until the consistency is perfect for drizzling.
Once baked, drizzle the icing over the rolls and top with remaining berries!
