Cheez-It Chicken Recipe
If this recipe sounds familiar, it may be because you’ve seen it here before. I posted it way back when a friend of mine gave me the recipe. But the first post was a little cheesy–no pun intended–and lacked all the yummy details and step-by-step pics.
So, when I made this family favorite again recently for Lola’s birthday, I decided it was time for an updated post.
Here are the simple ingredients:
- 8 thin chicken breasts
- 3 cups crushed Cheez-it Crackers
- 1 stick of butter, melted
- 1 cup of shredded mozzarella cheese
- 2 Tbsp dried parsley
- 1 Tbsp garlic salt (optional)
Obviously, you can adjust the amounts if you need more or less, but this will get you started.
I like to make a little assembly line to put it all together, starting by dipping each piece of chicken first in the butter, then the Cheez-its, then placing them in a buttered baking dish, folding the pieces in half and stuffing them with a little cheese.
Follow the same steps with all the pieces of chicken, then sprinkle them with the parsley and the garlic salt if you prefer it. Then, just cover and bake at 350º for 45 minutes

You know what Julie, to tell you the truth, the title of that recipe didn't really catch my eye to want to make, but knowing it was YOU that posted it with your good taste, I thought, "let me look at it", and just as I was staring at the finished product pic, my daughter Camille walked in and said, "YUMMY, that looks gooood"….so we are going to try it!!! However with your chic style, I think you should re-name it something charming! 😉

I just made this dish and my kids actually ate it. My husband also really liked it. I'm not a good cook and struggle with getting my three little kids to eat dinner so thank you!
