Food So Good It Has Its Own Day
Happy National Taco Day! If I had known this was coming up, I really would’ve made a bigger deal of it since tacos are definitely one of our all-time favorites at our house. But, since I just found out about it today, I’m going with a last-minute little celebration by sharing with you one of my favorite taco recipes, Crock Pot Chicken Tacos.This dish practically makes itself & yet is so delicious it leaves everyone totally impressed. And that is what makes it one of my favorite recipes.Okay, so all you do is buy a bag of frozen chicken breasts or tenderloins, & place half the pieces into the crock pot. (You may choose to cook the whole bag & save half of the cooked chicken for another recipe…love that part!)
Cook the chicken on high for around 8 hours*.(*Edited: time should be 4-5 hours on high or 8 hours on low.) By that time, the chicken should be perfectly cooked & pretty much shredding itself.Then, you just mix one packet of taco seasoning into the shredded chicken (add a little water if needed), serve it up in the shells, & top with your favorite toppings. This makes enough for around 10-12 tacos.Did I mention this is super-easy?

National Taco Day? Who knew? Well…obviously YOU did!;>) I have never done this either..so you are NOT the last one in America to try this…but you can bet I will try it this Fall. xo Diana

Do you have to add any water or anything to the chicken when you are cooking it?
