We’ll be celebrating Cinco de Mayo a day late. And we’re actually not celebrating it, but I will look for any excuse to eat Mexican food. Especially if it involves guacamole. And one thing I know for sure is that I could eat this guacamole with a spoon straight from the bowl. I may or may not have actually done this. I’m not sayin’. But I will be making this recipe tonight for when my parents come to dinner. In a small bowl, combine all ingredients. Using a fork or hand blender, mash until it’s only slightly chunky. Eat with your favorite tortilla chips. Or just a spoon.
