Ice Cream Sandwich Ice Cream Cake
In case you’ve been wondering where I’ve been lately, no worries! All is well. I’ve just been spending less time working here and more time with family and friends this summer. But school has started back for us and I’m trying to get back into a regular routine once again! It’s so hard, though!
To kick things back up here on the blog, I’m sharing a fun ice cream cake recipe I recently made for Dave’s birthday and shared on Instagram! My daughter, Abby, suggested I make a cake with ice cream sandwiches, so I pulled from an idea I had once seeing passing and this cake recipe was born!

Here’s what you’ll need:
- 12 ice cream sandwiches, halved
- 1 quart of ice cream, slightly softened
- 1 cup of whipped topping, thawed
- 12 doubled stuffed Oreos, crushed
- 1/4 cup chocolate chips
- Magic Shell ice cream topping to drizzle

Line the edges of a 9 inch spring form pan with parchment paper.
Unwrap the frozen ice cream sandwiches and cut them in half. Place the ice cream sandwich halves all around the outer edge. Work quickly, as the ice cream will start to melt!
Press half of the Oreo cookie crumbles into the center of the pan to form a crust.
Next, layer with the quart of softened ice cream of your choice. Cover with plastic wrap and freeze for approximately one hour.
Then spread the thawed whipped topping over the top of the ice cream, and sprinkle with remaining Oreo crumbles, and chocolate chips.
Lastly, drizzle the top with Magic Shell topping. Once that has hardened, cover with plastic wrap once again and freeze for another 2 to 3 hours.
When ready to serve, remove the outer ring of the springform pan, peel off the parchment paper, and serve immediately.
I used espresso chip ice cream for this cake and it was a hit with everyone!
We will definitely be making it again!
