Here’s a little recipe I tried out on my kids the other day, just on a whim, with a few ingredients I had on hand. And amazingly enough, it was a huge hit. And it’s a great alternative to the same ol’ waffles or cereal. So, I’m posting it here for those of you looking for a great summer breakfast idea. (And for my own future reference so I can remember how I did this.)Blueberry Quesadillas
Here’s what you need:
- soft taco size flour tortillas
- butter
- spreadable cream cheese
- fresh or frozen blueberries (thawed)
- cinnamon & sugar

Start off by melting a pat of butter in a non-stick pan. Then, spread a thin layer of cream cheese on one tortilla & place it face-up in the pan. Next, add 1/4 cup blueberries, spread evenly across the cream cheese. Top it with another tortilla, then press it down firmly with the back of a spatula to seal it together.

Flip once in the pan to lightly brown each side. Then, dust the top with cinnamon & sugar & cut into triangles. (If you have a really sweet tooth, dip into pancake syrup).
