Hey, friends!  I’m stopping in with a special Saturday post because I’ve got a really easy and yummy recipe for some Pumpkin Spice Pancakes and what better time than the weekend to try easy and yummy recipes for anything?! This one is seriously a piece of cake (no pun intended, of course), and you probably already have what you need on hand!

Here’s the scoop:  You’ll need…

3 cups complete pancake mix (brand doesn’t matter- just use the kind that just requires adding water)

2 cups water

1/2 cup canned pumpkin puree

2 teaspoons pumpkin pie spice

Just add all the ingredients to a mixing bowl and stir until mixed!

Then, just cook your pancakes in a buttered pan as you would regular pancakes! The batter may be thicker than a normal pancake batter, but the pancakes will be perfectly fluffy when they’re done!  This recipe should make 4 to 6 large pancakes, or 8 to 12 small ones.

Top with your favorite syrup and enjoy!  I’m already planning the next time I make these again.  And that might be for dinner!  Hope you love these, friends!
