Easy No-Bake Peanut Butter Cup Ice Cream Pizza
Dessert pizza! Who doesn’t love that? And this one is {easier than} a piece of cake to make because there’s no baking involved! It’s the perfect last-minute dessert because you can whip it up in around 15 minutes!
Here are the 5 simple ingredients:
one package peanut butter sandwich cookies (around 24-30 cookies)
1/2 cup creamy peanut butter
3 to 4 large scoops of vanilla ice cream (about half a carton)
1 cup Reese’s Peanut Butter Cups Minis
hot fudge sauce to drizzle over top

This is a great recipe for kids to help with, and Lola (almost) made this pizza from start to finish herself!
It’s best to leave the ice cream out to soften a little while you prepare the cookie crumb crust. The first step is to crush up the cookies very well to make the crust. We just put the entire package of cookies in our Ninja blender and it gets the job done in seconds.
Add the peanut butter in with the cookies just before blending to help them bind together for the crust…
Next, dump the crumb mix onto a waxed paper-lined pizza pan.
Press the crust evenly and firmly onto the pan with your fingers or the back of a spoon, making sure to fill in empty holes.
Next, scoop the ice cream onto the crust and allow it to soften enough to be able to spread. (No need to let the ice cream melt completely.)
Next, top the ice cream layer with the mini peanut butter cups, then drizzle the fudge syrup over the top!
And that’s it! Place the pizza in the freezer so the ice cream can re-freeze before serving! Once it’s ready, you can use a pizza cutter to slice it up just like a pizza!
