Simple Sausage, Bean and Kale Soup
Just when we had a few days of spring-like temps last week, Old Man Winter showed up again this week, completely uninvited. And judging from some of my friends’ Facebook pics, it looks a lot worse for those of you up north.
I guess there’s nothing else to do but wait it out and make more soups. And since my husband and I were craving a good soup with kale recently, we came up with this one. As always, easy, few ingredients, and pretty yummy, if I do say so myself. (Which, apparently, I always do.)
Here are the ingredients:
1 medium onion, chopped
2 Tbsp olive oil
1 lb ground mild sausage
2 to 3 Tbsp spicy spaghetti seasoning
2 32-oz cartons of chicken broth
2 cans cannellini beans
1 lb fresh kale
grated parmesan to top
Get things started by sautéing the onions in the olive oil in a large pot until softened, then add and brown the sausage.
Once the sausage is browned, drain any excess grease, then sprinkle on the spaghetti seasoning. (The seasoning is a combination of onion flakes, red and green pepper, parsley, and garlic–it addsjust the right amount ofspicy!)
Next, add the broth and beans, and heat to near boiling.
The last step is to add the kale. This recipe is packed with kale, so if you don’t prefer that much, you can use a little less. Once it’s in, press it into the soup with a ladle, then cover the pot and turn the heat to medium-low.
We like the soup when the kale is just slightly firm when served, but cook it into the soup until it’s to your preference.
And that’s it! Serve it up topped with a little parmesan and enjoy! Hope you love it like we do.
