Happy National Taco Day! If I had known this was coming up, I really would’ve made a bigger deal of it since tacos are definitely one of our all-time favorites at our house. But, since I just found out about it today, I’m going with a last-minute little celebration by sharing with you one of my favorite taco recipes, Crock Pot Chicken Tacos. This dish practically makes itself & yet is so delicious it leaves everyone totally impressed. And that is what makes it one of my favorite recipes.Okay, so all you do is buy a bag of frozen chicken breasts or tenderloins, & place half the pieces into the crock pot. (You may choose to cook the whole bag & save half of the cooked chicken for another recipe…love that part!)Cook the chicken on high for around 8 hours*.(*Edited: time should be 4-5 hours on high or 8 hours on low.) By that time, the chicken should be perfectly cooked & pretty much shredding itself. Then, you just mix one packet of taco seasoning into the shredded chicken (add a little water if needed), serve it up in the shells, & top with your favorite toppings. This makes enough for around 10-12 tacos.Did I mention this is super-easy?{Special thanks to Martha Stewart for letting me borrow this pic since we scarfed our tacos down so fast I forgot to take an after pic.}Also– special thanks to my sister for sharing this recipe with me even though I might have been one of the last people in America to try this.Hope your family loves these as much as we do!Sharing this recipe here.
